Tonight join executive chef and cookbook author, Pierre Thiam, and cook up some mighty delicious West African vegan fare. This possibly unfamiliar yet highly spirited and authentic cuisine marries West African ingredients and traditions with those of France. You'll prepare recipes that reflect the heart and soul of Senegal. Abala (Black-Eyed Pea Purée with Sautéed Eggplant wrapped in Banana Leaves) • Fonio- and Smoked Tofu-Stuffed Tomatoes with Lime Vinaigrette • Vegetable Mafe over Fufu (Peanut Stew with Pounded Cassava Balls) • Millet Couscous with White Bean, Date, Root Vegetable and Tomato Stew • Salatu Niebe (Black-Eyed Pea Salad with Herbs, Scotch Bonnet Peppers and Cucumber with Lemon Vinaigrette) • Sombi (Roasted Mango and Coconut Rice Pudding).
