Peter Berley is a chef, author of three cookbooks, and culinary instructor. Peter’s foremost concern is the development of local sustainable food systems and the fate of home cooking in America. He is the owner of The North Fork Kitchen and Garden, a culinary studio where he teaches intensive cooking and wood-fired bread baking workshops. Peter is the former executive chef of Angelica Kitchen in NYC. He has contributed to many magazines such as Edible Brooklyn, Food and Wine, Bon Appetit, and Everyday with Rachel Ray. His groundbreaking The Modern Vegetarian Kitchen received both James Beard and IACP awards. His second book Fresh Food Fast was chosen as one of the 25 Best of 2005 by Food and Wine magazine. Calling All Locavores: Homemade Bread and Market Menu--Live from Union Square
Market Tour and Partial Participation

Think there’s nothing in the market in the dead of winter? Think again. Join chef instructor and cookbook author Peter Berley for a true market-to-table culinary adventure. You’ll start this class by preparing dough for focaccia. Then, while it’s rising, Peter will lead the way to the Union Square Greenmarket where you’ll learn to shop the way market-driven chefs do – by choosing what’s local and seasonal. The ingredients you select will determine the menu. You’ll learn to improvise rather than solely rely on recipes. Market purchases might include freshly-caught fish, farm-fresh eggs, dairy, wine and a bounty of locally-grown produce. When you return to the classroom, you’ll focus on technique as you help Peter prepare a seasonal meal, bake off the bread, and sit down to savor everything, feeling content with the knowledge that you have just supported your local farmers. (Vegetarian-friendly; wine will be served.)
